The cuisine of Peru
Peru, country of the most different climatic zones
and landscapes, of countless cultural influences and an eventful history,
is also the country of one of the richest cuisines of the world. In the
Peruvian cuisine local and European recipes melt.
The geography of the country with its 84 of 115 in the world existing microclimates offers best conditions for a copiousness of ingredients searching for its equals. There are few fruits or vegetables that do NOT grow somewhere in Peru. The potatoe for example, one of the most important ingredients for the cuisine of Peru, has more than 4 000 different species! Peruvians eat a lot of meat, use plenty of beef and poultry and love fish and seafood. That´s no wonder: thanks to the cold Humboldt stream, Peruvian kitchen offers plenty of fish. Peru counts with more than 700 sorts of fish and 400 different shellfish. Already the ancestral Peruvians were inspired by this rich supply of ingredients, inventing interesting culinary creations. The Spaniards, influenced by the Moors on the Iberian Peninsula, added their ideas. The Italians, Chinese and Japanese immigrants also added their ingredients to the pot - the result is one of the most varied and richest cuisines of the world. In addition, there are many regional differences: At the coast there is a large selection of dishes based on fish, like sea-brace and sea-tongue, as well as seafood such as shells, lobster and calamari. Chicken and beef are also popular among the people at the coast. In the highlands especially potatoes are eaten, as well as Quinoa, wheat, beef and pork. In the rain forest there are many dishes based on freshwater fish. Fish like paiche or dorado are combined with Yucca, palm hearts and bananas. There is a great variety of fruits and vegetable, and particularly the rain forest is a paradise for fruit lovers, as in Peru everything is fresh and particularly inexpensive.
Taste the Peruvian cuisine! You´ll surely say: "¡Ay, qué rico!" ("O, yummy!"). ¡Que aproveche!

BUND
supports the Peruvian project Qhapaq ÑanThe federation for nature and environmental protection Germany (Bund für Natur- und Umweltschutz Deutschland, BUND) adopts the partnership for the project Qhapaq Ñan of the Peruvian organization APREC (society for the preservation of the ecological systems in Cajamarca). The Qhapaq Ñan is the old Inkatrail that lead in old times from Ecuador through Peru to Cusco and continued to Chile. The travel time from Cajamarca to Cusco was at that time about 10 weeks. John Herdin, president of APREC and Helmut Schenke, representative of BUND, made the agreement that the Germans support the Peruvian project with technology and experience from similar projects in Germany. Particularly in the area of ornithology BUND will support APREC. In Cajamarca, more than 120 kinds of birds are domestic, among them many endemic ones.

Peru
is in various aspects a country of superlatives, you find great archeological
sights next to fascinating landscapes. But more and more travelers visit
the country in order to combine cultural interest with sports activities.
As they are on the way, many of the well-known sport areas can be visited
during a round trip.
For example the small town of Lunahuaná: Only about 2.5 hours south
of Lima one of the most beautiful rafting areas of Peru is situated. Embedded
into high mountains, the river Cañete flows, turning to the Pacific.
The small place Lunahuaná in a well-known fruit-growing region
is starting point for rafting tours, which have current fasts of the degrees
of difficulty II to IV. The trip to Lunahuaná is recommended particularly
in the Peruvian summer, from December to March, then the river Cañete
has a lot of water, coming from the mountains wildly and clearly.
Lunahuaná lies close to the Southern Panamerican Highway. You go by bus from Lima to Cañete, from there you continue 45min along the river to Lunahuaná. This cozy village offers different kinds of accommodations; camping possibilities directly on the riverbank with grill places and many good restaurants, where trout and other typical dishes are served. Those who still want more action after the one- to two-hour-lasting rafting tour can explore the closer environment on a mountain bike. Lunahuaná is perfect for a stop on the way from Lima towards the south, and offers the possibility of becoming acquainted with a still unknown face of Peru.

Cusco,
22 August 2004
Today a long dream comes true - I will see Machu Picchu! We stand at the
platform in Cusco´s station San Pedro and wait for the backpacker-train
that will bring us to Aguas Calientes. The trip is beautiful. The comfortable
train slowly passes along the fertile Urubamba valley, small villages
and green fields. In the background, the snow-topped peaks of the Andean
glaciers protrude. After approximately 3 hours the train arrives at Aguas
Calientes. With us, people from all over the world step out of the train.
It is not even noon, thus we have sufficient time to climb up the Putukusi
mountain from which it´s said to be possible to have a breath-taking
view over Machu Picchu. We follow the tracks for a short while and then
a blue sign points the way up. After little meters already, the first
surprise: there is no way, but wooden stairs, which are steeply leaned
onto the mountain. Fascinating mountain dust and woods surround us. Everything
is green, fertile and blossoms. It is damp, but not too warm. On the way
we meet some people - which is always a good sign - it seems that we are
on the right way. On a narrow path we reach the neighbor mountain and
down there we can see, tiny and closely pushed together, Aguas Calientes.
Even up here I can hear here the train tooting, which probably makes his
way back to Cusco.
Now
the way goes steeply. Zigzag-like we climb up and turn around again and
again hoping to see Machu Picchu. Since we do not know in which direction
the holy city lies, the hike is exciting and full of expectation. Finally
we reach the top, with red faces we see a flag, the rainbow flag of the
Quechua rises above us, an oversized stone and then I see it, the arguably
most famous ruin city of the world - Machu Picchu lies right in face of
the mountain. I spot the houses and tiny little colored blots, the visitors.
Up here on the Putukusi it is quiet, with us few other hikers arrived,
but all sit devotedly on the stones and watch Machu Picchu with fascination.
Not far from the flag, hidden in the bushes, I find an immolation place.
Somebody has put food here for Pachamama, the mother earth: Rice, sugar,
quinoa, peas, beans....I pick a flower and put it on the stone, wanting
to make Pachamama benevolently to protect me on the rest of my journey.
Now I know where I am going to early tomorrow morning. I am glad that
I stay over night, that I could make this hike and that I will have much
time for Machu Picchu tomorrow. And now I am more curious than ever before!
